I-cuisine yaseNdiya inezinhlobonhlobo zokupheka zesifunda nezendabuko ezalwa nezwekazi laseNdiya. Njengoba kunikezwe ukuhlukahluka kohlobo lomhlabathi, isimo sezulu, amasiko, izinhlanga, nemisebenzi, lezi zidlo ziyahlukahluka kakhulu komunye nomunye futhi zisebenzisa izinongo, amakhambi, imifino nezithelo ezitholakala endaweni. Ukudla okuyisisekelo kokudla kwaseNdiya kufaka i-pearl millet, irayisi, ufulawa kakolweni ogcwele, kanye nezinhlobonhlobo zamalenti, njenge-masoor, uphizi wamajuba, ne-moong. Izitsha eziningi zaseNdiya ziphekwe emafutheni omifino, kepha uwoyela wamantongomane uyathandwa enyakatho nasentshonalanga yeNdiya, uwoyela wesinaphi empumalanga yeNdiya, nowoyela kakhukhunathi ogwini olusentshonalanga, ikakhulukazi eKerala nasezingxenyeni eziseningizimu yeTamil Nadu. Ukudla kweMaharashtra ibhalansi ebanzi yokuthanda okuningi okuhlukile.
Izinongo ezibaluleke kakhulu futhi ezisetshenziswa njalo e-Indian cuisine ziphelele noma ziyimpuphu, imbewu emnyama yesinaphi, i-cardamom, ikhumini, i-turmeric, i-ginger, i-coriander ne-garlic. AmaNdiya abheka ukudla kwasekuseni okunempilo, ngokuvamile akhetha ukuphuza itiye noma ikhofi ngesidlo sasekuseni, noma ukudla okuthandwa kakhulu kuyehluka esifundeni. Abantu baseNyakatho yeNdiya bathanda i-roti, i-parathas, nesitsha semifino esihambisana ne-pickle kanye ne-curd ethile. Ukudla kwasemgwaqweni eNdiya nakho kudumile. Abantu baseGujarat bakhetha i-dhokla nobisi, kanti amaNdiya aseningizimu akhetha i-idli ne-dosa, ngokuvamile ephelezelwa yi-sambhar nama-chutneys ahlukahlukene.
Imindeni yamaNdiya ivame ukubuthanela "isikhathi sokudla sakusihlwa", esifana nesikhathi setiye sokuxoxa nokuba netiye nokudla okulula. Ukudla kwakusihlwa kubhekwa njengokudla okuyinhloko kosuku.
